Description:

570 calories in roast duck, 34 grams of fat and 13 weight watcher points in a 7 oz serving. Unless your portions run small, your calorie intake will be higher, espcially when your host insists you have seconds.

Roast Duck with Pomegranate Glaze

Dairy-Free, Gluten-Free

    * 3 cups pomegranate juice
    * 1/2 cup sugar
    * 2 ducks, 4–5 pounds each
    * 1 lemon, cut in half
    * 2 tablespoons sea salt
    * freshly ground black pepper
    * 4–6 fresh rosemary sprigs
    * 2 small white or yellow onions, peeled
    * additional rosemary sprigs and pomegranate seeds for garnish

Cook pomegranate juice and sugar in a medium saucepan for 20–30 minutes or until juice thickens into a syrup. Stir frequently so sides of the pan do not burn. Remove from heat and keep warm.

Wash and dry the ducks, removing the giblets and neck and trimming off the excess loose fat from the neck area and open cavity. Rub the ducks all over with the lemon halves. Season with salt and pepper inside and out and place the onions and rosemary in the cavity. Truss the ducks and place on a rack in one or two roasting pans. Preheat oven to 450°F.

Place ducks in hot oven and roast for 15–20 minutes. Then, remove from oven, prick the skin all over with a fork, baste with pomegranate glaze and reduce heat to 375°F. Continue to roast, basting every 10 minutes or so with the glaze. (If too much fat accumulates on the bottom of the roasting pan, you may remove some of it during cooking.) Roast for a total cooking time of about 1–11/2 hours or until the internal temperature reaches 180°F for thigh meat or 170°F for breast meat. Let stand for 10 minutes to allow the juices to settle. Baste for the final time.

Place on a large serving platter; decorate with rosemary and pomegranate seeds, if desired. Serve with any leftover glaze.
