Makes 1 cup
This salad dressing is a delicious, non-fat alternative to mayonnaise-based dressings. Serve it with vegetable crudité or hearty greens like endive and radicchio.
2teaspoons grated lemon zest
1tablespoon fresh lemon juice
2tablespoons snipped fresh chives
1tablespoon chopped fresh basil
2tablespoons chopped fresh dill
1tablespoon chopped fresh tarragon
8ounces silken tofu
1tablespoon Dijon mustard
1tablespoon white-wine vinegar
1/2teaspoon salt
1/4teaspoon freshly ground black pepper
 1.   Place all ingredients in the bowl of a food processor. Process until smooth and creamy. Season with salt and pepper.
