Any creative veggie ideas?
I am trying to get more veggies into my weight watchers like diet, but I am getting really bored with my carrot sticks and peas. I am not picky at all- so I'll try anything. Anybody have creative new ideas for me to try?

Make soup...start with low sodium stock (like chicken or vegetable) add all kinds of veggies like carrots, onions (saute lightly first), celery, parsnips, spinach, crushed tomatoes, zucchini, summer squash, and anything else you may have in you veggie bin or freezer. It's delicious and fills you up. I make big pots and eat them for days. I eat big bowls knowing I am getting my veggies and fiber and not tons of calories. You can add chicken or turkey or sprinkle a little parmesan cheese on top.

You could always slice up cucumbers and dip that into hummus.
I make an easy stovetop frittata for breakfast that has a lot of vegetables in it - broccoli, asparagus, tomato, spinach, etc. You knock out a couple of servings of vegetables for breakfast!
I make a creamy soup that is virtually all vegetables (tomato, carrot, celery) and can be frozen in ice cube trays and popped in the microwave for a quick meal.
A veggie sandwich - spinach, tomato, cucumber, mushroom, sprouts, etc. - whatever you want on whole grain bread and the condiment of your choice.

salsa on salads, chicken, whatever you eat. Shred root veggies like turnip or rutabaga on a salad. Juliene peppers to dip in things. Or put peppers, zuchini and onions in eggs in the morning. Eat coleslaw with a homemade o/o vinagrette.
Stew!
Just try some new veggies.

I'm not fond of food preparation of any kind, so I buy packages of the pre-cut fruits and vegetables in the produce section of the grocery store and use them as my snack foods. I especially like raw broccoli and can down half a bag in one sitting - and not feel guilty!

Chicken broth is healthier for you than stock, try zucchini, celery, spinach, lettuce, tomatoes, eggplant, peppers, just go down the isle & try things, make a salad, an omelet, soup, whatever you want, be creative.

Frozen veggies w/ garden vegtable marinara sauce and sprinkle parm cheese/seasoning. My favorite is "California Mix" when I am craving pasta. Add chicken or tofu to make it a meal.
Also, coliflower with 2% cheese sprinkled on top is a lot like mac and cheese (if I am having the real deal I still add some coliflower to make it a bit healthier and a lot heartier).

I like spagetti squash with sauce on it.
Anything you would use a ground meat in I use a little meat and then dice celery, onion, carrot and zucchini. Saute them and then add with the meat. Oh and mushrooms too.
The other day I made lasaga without meat just the veggies. And inbetween the layers used sauted zucchini cut in strips.
Butternut squash is excellent I have heard you can bake it to make "fries" but I haven't tried it yet.
You can always roast a chicken and put all the same veggies that you would put with a beef roast and for the veggitarian you could just roast seasoned veggies.
I love yams. But they are high in calories.
Zucchini is so good. I love to just cut it ion the diagonal, thick slices and fry them in pam on a non stick skillet. with some salt and pepper. That is my favorite side dish and almost no calories.
I like to take cabbage and onion and saute them same way and add a bit of soy sauce or teriaki sauce to it.

If you want something quick and easy, try Bird's Eye Asparagus stir fry mix. It has asparagus, carrots, cauliflower and green beans with teeny tiny noodles in it.. I steam it in my microwave. It is SO delicious. I can eat a bunch of it and not get sick of it.

veggies
A lot of people don't like veggies because the ones they get at the Supermarket are grown for easy shipping, not flavor or nutrition. If you can find a local farmer who does CSAs (community supported agriculture) you can get fresh, excellent tasting organic produce delievered to your home. It is often cheaper than buying it at the Supermarket because there's no overhead. Almost any veggie tastes good just sauteed in olive oil with a splash of soy sauce-If it is grown in healthy soil, not coated in wax, and relatively fresh. I love steamed greens or stirfry. Vegetables like kolorhabi and daikon radish can just be eaten plain. Sugar snap peas are good raw, too. Some people like snacking on some of the heartier sprouts, like pea sprouts. There's also dried peas coated in wasabi or other dried veggies are easy to carry and snack on.

I am not a huge veggie person, because I am used to getting everything in a processed, prepacked, nonrefrigerated way (yes I am trying to change this) I am starting out slow with making sure every meal has a veggie side dish (even breakfast) and I drink an 8 oz serving of V8 (which counts as 2 servings)
My new favorite side dish is coleslaw mix sauted in soy sauce and seseme oil wrapped in a wonton wrapper and steamed... it effortless and SO YUMMY..

If you dislike EATING vegetables (texture/flavor) try Odwalla or Naked juices. That is the only way my boyfriend gets fruits and veggies in his diet.

In the frozen food section, there is a relatively new product, microwave / steam in the package vegetables.

P.S. I also grill alot of vegetables on my George Foreman Grill. Red and green bell peppers and onions are FABULOUS on a fat-free bean burrito.

I saw on Rachel Ray yesterday a roasted vegetable rattitoui. I know I spelled it wrong.
She just roasted a bulb of garlic in the oven for 45 min first then set that aside to get cool enough to handle.
Then chop in large bite size pieces, 1 peeled egg plant, 3 zucchini, 1 softball sized onion, 1 red pepper and 1 pint of grape tomatoes. She did it on 2 different baking sheets. She used olive oil (but I have done this with the tomatoes and onion with pam spray instead I don't want to add the calories or fat.) Salt and pepper therm Then roasted all but the tomatoes for about 30 min. She didn't say the temp but when I have used her other recipe it was 450 degrees. The tomatoes only for 10-20 min depending on how dry you want them.
Boil 1 pound of whole wheat penne pasta
In a large bown squish the garlic in and salt and pepper and about a cup of the pasta water. Then stir. Add the tomatoes and stir again. This becomes the sauce. Oh and I think she used fresh thyme too.
Then add the noodles and veggies. Lastly if you like parmesan cheese.
Mix it all up. It looked so good. And it was for 6 servings. You could easily cut it down to suit 1 or 2,
I don't know how this taste but if it is anything like the one with just onions and garlic and tomatoes it will be amazing. I have this one at least once a week.
If anyone tries this let me know. I have to wait a bit to get some eggplant.

"Fried" Okra
If you like breaded okra - buy fresh okra, cut it into pieces and spray a baking sheet with oilive oil spray - then place the okra pieces on the baking sheet cut side up - spray again with olive oil spray and pop into the oven on 375 until golden brown - sprinkle a little bit of salt and it will satisfy your fried food craving.
My favorite trick for fruit is putting frozen fruit (no sugar added - just the fruit) into a bowl then dumping a small container of the same fruit flavor of yogurt over the top of it. Pop that in your bag to take to work and in a couple of hours the fruit will be soft enough to eat and the yogurt will be icy - mix it up and it's like eating a frozen yogurt blizzard. Mmmmmmm

Low fat, low cal spinach dip:
thaw package (500grams) of chopped spinach and squeeze out water
mix with: 1 cup plain low fat yogurt
4 Tablespoons sour cream
lots of dill
garlic
some dry onion soup mix (not too much because it has a lot of salt)
eat it with other veggies or just eat it plain! Yummy!

My boyfriend is diabetic, so we substitute sweet potatoes in for real potatoes whenever we can. I made a turkey pot pie with sweet potato the other day that was amazing! Also, sweet potato fries in the oven with cayenne pepper and garlic on them are to die for and super simple. Check out recipe sites like allrecipe.com for some more ideas (that's what i do!)

GREEN SMOOTHIES!
I have one for breakfast each morning, knocks out about 10 servings of veggies... some of my favs: spinach and banana..... kale, mint and pears..... kale and anything...... beets, strawberries, kale...... google green smoothies and see what comes up. Some of them sounded gross to me, but try it and I have no doubt you'll be happily suprised!

Ooh, I love that 7:35! I belong to a CSA (community supported agriculture where you buy shares of a farm and you get a weekly bag o'produce) and there were some weeks where I didn't know what to do with vegetables I didn't normally eat! This year I will Google 'green smoothies' :) Do you use a juicer for those?

You HAVE to get a Vita-Mix for the smoothies.... expensive, but you can get one off ebay for about $100..... worth it's weight in gold! You will not be dissapointed. I have an old 3600 and LOVE IT!!! They don't die, either!

(mashed or whole) steamed cauliflowers with i can't believe it's not butter. sooo good almost liked mashed potatoes but much healthier for you.
also japanese sweet potatoes. delicious steamed or boiled. much better your avg sweet potato.

My newest veggie find Bok Choy.
It is really good.
So I made a stir fry with it and onion and garlic and chicken. It was amazing.
Very low calorie.
It is fun to experament with different veggies all the time. Not always a good dinner choice but on the other hand you never know until you try it.
Squash is a great winter veggie. I find it to be a comfort food and also low in calories especially compared to how filling it is.
