Living Single

I have a really tough time buy fresh vegetables as a single woman living with a roommate who doesn't eat any vegetables. I try and buy a bunch of veggies every time I go to the store, but by the time I get around to eating them all they have gone bad. Any suggestions from people in the same situation?

I live with my family that eat absoultely nothing I do. I buy romaine, spinach... I eat alot of salads.. I do find my spinach goes bad so what I have started doing is splitting the bag in half. I cook part of it and freeze it for green smoothies or soups..

baby carrots are another thing I buy.. use on salads and as snacks.. just buy small ammounts at a time.. you can always pick it up as you need it. I just put back like 15 dollars to buy my spinach , carrots, romaine, onions, celery... my usuals
as far as tomatoes.. unless for salads.. I use canned tomatoes.

or you can make a huge pot of soup for the week. you have one meal for your day made and over with.. these are a few things that work for me.

Is it possible for you to cook them as soon as you get home or make a big salad without dressing? For me, if it's already prepared, I will eat it more quickly. If I know I have to prepare something, then I procrastinate, then it goes bad.

When I get back from the grocery, I clean up a lot of my vegetables immediately, so that I have carrots ready to dice into soup or stir fry, celery cut into sticks, beets ready to grate... Prep work on vegetables takes a long time, so if you do enough for 2-4 meals ahead of time, you're more likely to make optimum use of your produce.

I am the same way. Every time I guy vegetables I just waste money. They all go bad and I end up eating an open faced grilled cheese. If I want vegetables, I order a salad.

My husband eats NOTHING green unless I put it in our dinner on nights I cook, so the bulk of veggies and fruits we buy are for me. I am a fan of buying things that will last a while, like oranges, apples, carrots, onions, and then using the more delicate stuff within the first couple days of buying it. So I'll have meals with broccoli, spinach, and lettuce early in the week, and then eat hardier veggies and frozen fruits for smoothies the rest of the week.

It's not perfect, but I don't want to be in the grocery store every other day.

I may start freezing some veggies for green smoothies. That sounds like a great idea!
