Another Yummy Veggie Recipe
Funny, the things I dream up when I have a fridge full of veggies! :-) I had some beets that needed to be used up, and here is what I invented!
Beets, Carrots, Peppers & Mixed Chard
Heat up about 2 TBS of olive oil in a hot dutch oven.
Saute the following:
3 large beets cut into 1/2 inch cubes
Leaves & stems from the 3 beets, chopped into 1/2 - 1 inch pieces
2 cups of baby carrots cut into 1/2 pieces
Saute for a few minutes, then turn the heat down and let simmer until carrots and beets are tender, but not mushy
About 1 cup of red & yellow grilled peppers (frozen ones from Trader Joe) cut into 1/2 inch pieces
1 whole bag of Trader Joe's Mixed Chard
Turn the heat up and cover the pot. Stir every few minutes to keep the chard from burning.
Once it starts to wilt, turn the heat down and simmer until the chard is cooked and tender, but not soggy.
Serve as is!! The beets, Carrots & Peppers sweetens the chard, which is slightly bitter. It sounds unusual, but tastes fantastic!!
I'm thinking of trying to make this again, but using sesame oil and then adding a little ginger to it... :-)

Okay, this may be a bit TMI, but I noticed that the beets made my poop turn purple... LOL so beware, this may be a side-effect!
