cucumber

Anyone know of any good protein ideas to eat with a cucumber? tia.

scoop out just the seeds (through the length of the cucmber)

Pile tuna fish in the middle. with or without mayo or possibly a little low fat cheese with it.

plain yogurt...greek yogurt is very thick - good for dipping. Add some chopped herbs (garlic, dill, curry powder, basil and mint are my favorites - one at a time, not all together!) to the yogurt for extra excitement. Or cut the cucumber into bite-sized chunks and make a dressing out of plain yogurt (or herbed plain yogurt, as above)

Fage brand greek yogurt is pretty expensive, but it has something like 23 g of protein in a cup, and only 8 or 9 g of carbs and 0g fat (in the non-fat version...the full-fat version has 23g of fat!).

Pretend it's a cracker...

I eat them with cheese or salami like a cracker. The seedless ones work better for this (they are usually the ones wrapped in plastic at the supermarket).

Great suggestions

I like them sliced and soaked in rice vinegar

I also like them chopped into bite sized piees and combined with tomatoes, LF feta cheese, red onion, chopped kalamata olives (a few go a long way) and greek dressing (TJ's had a great low-cal one) for a yummy greek salad. This pairs wonderfully with grilled chicken.

I make tzatziki sauce with them (the fage yogurt makes for wonderful sauce) and have it over grilled chicken 'n veggies skewers.

Also - I like cucumbers in chopped salad and I'll add a bit of meat and call it a meal.
