Office party ideas for potluck

Our office is having a party in a couple weeks & I'm trying to decide what to bring. We will have pizza & a chocolate dessert, and I would like to bring something a little healthier so we don't all end up in 'food comas.' Besides a veggie/fruit tray or salad, what can I bring?? Any recipes are welcome!

Depending on your budget, you could take a couple pounds of ready-to-eat shrimp and a nice cocktail sauce spiced up with fresh ground horseradish. This is always a crowd pleaser and fairly healthy.

Hummus, falafel, babaganoush dips with pita chips and crudites are a fantastic choice for something healthy that people will actually eat.

If you like cooking, you could make some kind of stuffed mushrooms - you can do low-cal versions of fillings and no one will even guess it because mushrooms are naturally so moist.

A quiche or a frittata is easy to control the calories for, and lots of people are into the high-protein approach even if they're not trying to lose weight. My diet favorites are artichokes with low-fat cheddar, mushroom/leek/LF swiss, and herbed feta with halved grape tomatoes. Use condensed skim milk instead of heavy cream, use 4 whole eggs and 3-4 egg white...a 1/8 serving will come in around 200 calories.

Smoked salmon-wrapped asparagus spears

Roast asparagus spears with a squish of olive oil spray for 5-10 mins, making sure they're still firm enough to be finger food. Chill them in lite vinaigrette in the fridge, then spiral wrap with a strip (approx 1/4 of a 1oz slice, lengthwise) of smoked salmon. Can also be served warm. Each spear comes to 25 calories.
