Why do we care about foods alkalinity?

I don't know much about the alkaline/acid food theory except that I have heard that those with a more acidic ph level are at higher risk for most diseases, especially cancer.

there is something to this general idea- especially to help people get more energy. There are many lists and sometimes the info is contradictory. We are digging deep into this idea right now.
