I hate vegetables

I hate vegetables so much it hurts. The only veggies I seem to be ok with are potatoes, onions and peppers, and those are only when they're cooked into submission. It seems like I ought to be eating more vegetables but it's just so hard. I ate a raw carrot the other day and gagged the entire time. Has anyone else here had that problem? If so, what did you do? I want to eat them, I really do, but I don't know how to get started.

Spices are your friend. Garlic, pepper, olive oil, curry. Have you tried cooking veggies?

I have the same problem. I can handle celery and cucumbers (are they fruit?) raw, but that's it. I love green beans and corn, but I don't think they are very healthy.

I'm a big fan of cooking the hell out of them - if I can still tell what they are, I can't eat them. Boil 'em, stick them in a blender, top with a tablespoon of parmesan (30 cals), and think of it as medicine rather than food. 8oz = 2 servings of vegetables (unless you cheat and add a lot of water).

If they're cooked sometimes I can gag them down but I feel like it sucks out their nutrition. That might be a good place to start though.

How are you on soups? There are so many varieties that pack in a huge amount of vegetable servings.

Remember, there are hundreds of different kinds of veggies out there and each can be prepared in dozens of ways resulting in different flavors and textures. Experimentation with an open mind might be your best bet.
