Lunch for the Ladies

I would really appreciate ideas/recipes for an easy and fast lunch for 4 women who are watching their weight. No shrimp please.

Mixed greens with vinaigrette (1Tbsp olive oil total)
Portobello, onion and gouda quesadillas

8 x 6" flour tortillas
6oz gouda cheese, slices or shredded
1/2c onion, sliced
8oz portobello mushrooms, sliced
Salsa (Desert Pepper has interesting combinations)

Saute the veggies in Pam or a little broth. Distribute in equal parts on 4 tortillas, top with the cheese, stick in oven or dry-fry until cheese melts. Cut into triangles and serve with salsa on the side.

Calories per serving (incl. salsa and 1c green salad with dressing): 430
