Thanksgiving Leftovers!

YUM! If anyone still has any turkey leftovers I insist you make this soup. It is soooooo good, and incredibly easy.

Turkey & Wild Rice Soup

1 medium onion, chopped
2 stalks celery, diced
2 carrots, diced
2 C. diced turkey
1/2 C. uncooked Uncle Ben's wild rice and long-grain rice
1 seasoning packet from the wild rice mix
1/4 t. pepper
3 (14 1/2-oz.) cans chicken broth (I used 2 chicken and 1 veggie)
1 (12-oz.) can evaporated milk
1/3 C. all-purpose flour

Place onion, celery, carrots, turkey, 1/2 cup wild rice and long grain rice mix, rice mix seasoning packet and pepper in slow cooker. Pour broth over all. Cover and cook on Low for 6-8 hours or until wild rice and vegetables are tender.

Mix milk and flour; stir into soup. Cover and cook about 20 minutes or until thickened.

Serves 6.

The original has about 222calories per serving. I left out the evap milk and flour because it tasted absolutely perfect like it is, now it is only 150 calories per serving! YUM!

I have a great dish like that - in addition to the stuff you've listed, I add brocolli, zuchinni, peas, roasted pepper and have a one dish meal that packs beautifully for lunch. It really doesn't add much more for calories and bulks up the dish a lot. I don't use flour or milk either, however evaporated skim milk is something I use a lot to add creaminess to a dish that calls for cream without adding too many extra calories.

Be careful with those leftovers - unless they're frozen, they're on the brink of spoilage - they're almost a week old! Older for those of us who prepare some of the foods in advance!!
