2 cups of uncooked rice
1-lb bag of black turtle beans, soaked overnight
1/2 chopped onion
Chicken bouillion cube(s)
Fresh cilantro
If you like it spicy, half a finely chopped fresh jalapeno pepper

Simmer the beans as per package directions for 3 hours, adding onions (and optional pepper) for the last hour.
Cook the rice as per package directions, throwing in a bouillion cube or two.
Mix the two together, add salt to taste.
Makes about 12 x 1-cup servings and freezes well if you keep it moist.

Per cup: 200 cals, 15g fiber, 11g protein, 2g fat

That recipe sounds good! And if you aren't vegetarian, consider adding a small amount of bacon or cook the beans with a hamhock for a variation. You could also toss in a can (or fresh) of chopped tomoatoes one time and some sliced celery.

if you use a pressure cooker it takes alot less time for your beans to cook. just DONT add salt till they are almost done or they will get tough.

HOw do you cook beans in a pressure cooker - I tried once and it stunk up the whole house.

Or simply use the canned black beans, must simpler. Just be sure to put them in a colander/strainer and thoroughly rinse them due to sodium content

pressure cooker

Cooking in a pressure cooker is a cinch once you get the hang of it and follow a few basic rules. The first few times can be daunting.

Make sure you add sufficient water in the pot so you don't burn the food. Once your pressure cooker knob begins to rock lower heat to medium and keep at a gentle rock. Cook for less time than recipes ask for, i.e pre-soaked beans are done in about ten minutes or less. Throwing a tea bag in with the beans makes them less flatulent. Toss out the tea bag once the beans are cooked. Split peas and lentils once they come to a boil just take 5 or 6 seconds after which you turn off the heat and wait for pressure to drop.

Most important rule to remember is to let the pressure drop before you open the cooker. This can be speeded up by running a trickle of cold water over the rim of the cooker in the sink.

Between the pressure cooker and a small rice cooker preparing a tasty, healthy meal is a breeze.
