What's your favorite Low carb creation?

I have been doing Atkins for the last 1 1/2 years. I feel really healthy. The blood work is amazing. The weight loss is 61 lbs. I am 6 lbs away from my goal and having motivational issues.
I really like to cook. New recipes are motivational in themselves for me. After 1 1/2 years, I have explored almost all the recipes at my figure tips.
I would like sugar free (or sugar substitute), low carb recipes that could work with the Atkins philosophy of low carb, restricted sugars and healthy fats.

You could join my team or one of my Atkins groups to share if you don't want to post on this thread.

Pick up a South Beach recipe book. My best friend swears by their dessert recipes. Her favorite is a concoction of ricotta cheese, splenda, and your choice of flavorings such as unsweetened cocoa powder or vanilla extract. Quick and easy - you work out the proportions to suit your tastebuds.

The link below is for a fantastic recipe, super super low carb flax bread. From that site, you can also get a great muffin recipe, a pizza crust recipe, and a few others. This flax bread is now a diet staple for me, as it's sometimes the only "grain" serving I have in a day.

But, I for one do not use any kind of artificial sweetner, nor will I, so I usually use sweetners like agave nectar or vegetable glycerin that don't affect blood sugar so much. So Atkins is out of the question for me, as it relies on sugar alcohols.

Thank you so much for the link! I just bought flax meal for the first time today. I am excited about the link you supplied.
What is agave nectar and vegetable glycerin? I have never heard of them. I have always been leary of sugar substitues. Before Atkins I sweetened with real maple syrup or local honey.

Agave nectar is like a sap from the agave plant (the same plant used to make tequila). Usually comes in light and dark- the light kind of resembles honey, the dark, I don't know what it resembles, but add it to whipping cream with vanilla and it's DIVINE. Vegetable glycerin is derived from coconut oil. VG is sweeter than sugar, so you need less. Both have very limited effect on blood sugar. But, they do have calories. (4.3 per gram for VG, 2.9 for agave)

Google the two, and you should find lots of info. Apparently VG doesn't knock the body out of ketosis.

And seeing as I'm not doing Atkins, I personally add a half a cup of oat bran and an extra 1/4 cup of water and tbsp of BP to the flax bread. I don't use any sweetner at all, and sometimes add some oregano, basil, garlic and onion.
