When to start narmal diet after gaining ideal weight??

I am from India and have retired from the Air Force in 2004. I am 57 years old now. After retirement I gained tremendous amount of weight and started weighing 211 pounds. That was the time in November 2008 that a new gym opened in our Golf Club and my wife and I joined the gym for the first time in our life. We started with Cardio seriously and started loosing weight.We gave up Wheat, Milk, Refined oils, Sugar and the weight loss increased tremendously. Now I weigh 158 ponds- a loss of 53 pounds in 8 months. I plan to shed another 10 ponds or so get into my BMI. What do you suggest I do after I have come to my ideal weight? Shall I start eating the above mentioned four things in moderation and do without them? I do about 50 minutes on treadmill, 20 minutes on elliptical and 20 minutes on static cycle. I also lift some weights for my back and biceps and about 50 abs crunches. Should I reduce these exercises as well?
