Diabetic Cake???
Are there any diabetics on here that can give me any advise about making cakes? My father in law is diabetic and doesn't want anyone to do anything for his birthday today. My two sister in laws are really broke so he doesn't want them to have to spend money, and he can't have any sweets because of his diabetis so he just wants us to all forget his birthday. This is making me horribly sad.
I've tried before to bake him cookies with Splenda but OMG they were awful they didn't rise at all and they were just... well yuck.
So does anyone have any good receipes to makes something like a cake, pie, cookies etc for someone with diabetis??

I did a quick search on line, and I found this recipie.(I provided the link) I think it would be low enough sugar to work for a diabetic, may have to have a small slice. My mother is a Diabetic, and I am on the borderline. I grew up, and still follow a Diabetic diet.
I think this might work.
You may have to make the apples yourself. If you do, you could leave on the skins, and that would add fiber, and have a less impact on blood sugar.The cake does have 65g of Carbs, but you could lesson the brown sugar by a TB spoon.
That is what I would do, I hope that gives you an idea.

Here's an easy one!
All you need is a premade pie crust (graham craker is really good) or you can make your own. Then, go to a yogurt shop (like tcby) and buy a pint of sugar free soft serve yogurt. Pour the yogurt in the crust, freeze until hardend, and serve.
Yummee! And there are so many variations you can do.

that crust
would really rain on a diabetic's parade. Now I'm not sure how stringent your father-in-law is with his sugar in-take but I wouldn't suggest a graham cracker crust- it's just like cookies!
I think parfaits would be nice- using sugar free pudding and sugar free whipped cream. You could add some fruit for color. Also, what about skipping dessert entirely and just having a nice balanced meal together as a family? Or skipping food altogether and just enjoying each others company? I could think of lots of activities that wouldn't involve food but should brighten the day.

I take an angel food cake and slice about 1.5 "off the top, then hollow out the bottom layer, mix sugar free pudding according to package directions and pour into the hollowed out center, replace the top and frost with sugar free Cool Whip. Delicious!
