Cheese Ravioli w/ Rosemary & Lemon Low fat dish

1 (16 oz.) package cheese ravioli
1 c fat-free cottage cheese
1/2 c evaporated skim milk
1 tsp dried rosemary
1/4 tsp salt
1/4 tsp ground black pepper
2 tsp. fresh lemon juice
1/4 c reduced fat parmesan cheese
3 tbsp snipped chives
1 tsp. finely shredded lemon peel
Cook pasta according to package directions. Drain and set aside. Cover to keep warm.
meanwhile, in a blender or processor, blend or process teh cottage cheese, milk, rosemary, salt and pepper until smooth. Set the cottage cheese mixture aside.
Drain teh ravioli and tarnsfer it to a bowl. Drizzle the lemon juice over the hot ravioli and gnetly toss. Then pour the cottage cheese mixture on top and gently toss until well coated.
To serve, transfer ravioli to plates, In a custard cup, combine the parmesan cheese, chives and lemon peel. Sprinkle the mixture on top of each serving. If desired, can be served with lemon wedges.
