|Cinnamon-Apple Crisp Crepes|
|4||Granny Smith apples, peeled, cored and diced|
|1/3||cup packed brown sugar|
|1||lemon, zest and juice|
|8||sweet batter crepes (see sweet batter recipe)|
|1||cup low-fat granola |
Combine first six ingredients in a medium saucepan. Simmer over medium heat 5 minutes, until apples are tender and liquid is reduced. Arrange crepes on a flat surface. Top with apple mixture and granola. Roll up and serve.
