Preheat oven to 400F. Lightly coat a 12-cup muffin pan with nonstick cooking spray.
In a large bowl, combine flours, sugar, ginger, baking powder, baking soda, cinnamon, nutmeg and salt.
In a small bowl, combine applesauce, molasses, buttermilk and egg whites. Add the applesauce mixture to the flour mixture. Stir just until combined. Fold in dates.
Divide batter among muffin cups. Bake 15-17 minutes or until golden and muffins are pulling away from the pan.
