Banana French Toast
• 1 slice bread (rye, pumpernickel,
• ¼ tsp vanilla extract
• ½ Tbl milk, low-fat , 2%
• 3 Tbls protein powder, vanilla
• 2 egg whites
• 1 tsp splenda (optional)
• 1 tsp oil, high oleic safflower
• ½ Tbl orange juice
Spices / Flavoring
• ¼ medium banana
Set bread & banana aside.
Mix egg whites with remaining
ingredients.Place bread into mixture
and let soak for about 1 minute
Pour the bread and rest of mixture
into oiled skillet. Cook over medium
heat, flip over when golden brown
Scoop excess liquid onto bread so it
won't burn, continue to cook other
Serve with sliced banana on top.
Plan Ahead/Freeze instructions:(don't freeze banana!)
Cool then freeze in single layer. Once frozen (about two hours) they can be packaged individually or placed in a single freezer bag.
Remove from freezer, and heat in toaster or toaster oven, then serve.
