If you think about steak, 8oz is a fairly common, yet smaller steak... 3.5-4 oz is the common size of food for protein to be calculated based on. Think about the size of a 8oz steak and how much 3.5 oz of steak would be (just under half). I don't think that 1 piece of sashimi is ever 3 oz at a "normal" Sushi bar.
I think that 1oz or 1.5oz is a more appropriate size to do these calculations with. Anyone agree?
