What are you having for lunch?

I need ideas for a healthy lunch.

Soup is a good one and there are a lot of low calorie, low sodium brands out there.

I LOVE cucumber sandwiches in the summer. Lite bread and mayo, thin sliced cucumbers and a dash of salt. Yum!

carrot sticks and dip, a spelt tortilla with chicken, olive oil mayo, red pepper and lettuce, as well as a cup of soup.

I'm a three meals, no snacks kind of person.

I loce nice lunches. Here are some of my usuals -
low fat humus, a pitta and salad.
Large salad with low fat feta cheese and a couple of stuffed olives and garlic.
Cous cous with come chopped up salad veg mixed in.
Low fat cottage cheese, 3 rye crispbread and salad.

My salads are usually a mix of watercress, baby spinach and rocket. Yum.

I'm having a big tossed salad loaded with 0 point veggies. (according to Weight Watchers plan) I'm going to add some tofu, beans and avocado, a couple tsp Paul Newman Italian dressing and an orange for dessert.

Carrots, with a tinyy bit of ranch..
a small mixed green salad, light on the dressing..
and a little bit of the weight watchers icecream..a littttttle!
And to drink, water :)

Today: Smartones and an orange- I almost never have time to make a lunch. Im not on WW but I love their micro-meals.**

Sometimes when I have time I will make a yummy garden salad with tofu or avocado and light ranch dressing (i mix the light ranch w/ vinegar to make it even more light). with an orange, of course.

**for all the people thinking/about to say I should be making a big meal and freezing the leftovers instead of buying the micro-meals - I am single so large meal prep is not practical for me and if there are leftovers, I WILL eat them. This works for me.

I make a lasagna - rice noodles, fat free ricotta, skim mozzerella, simple tomato sauce, and a mix of organic veggies and tofu for the "meat." I separate it into one-cup plastic containers and freeze. Super easy to re-heat and super tasty!

Today was a Healthy Choice steam bowl. Cajun Chicken & Shrimp. Super delish!!!
Also some canteloupe. mmmmm....
SO good and filling. Canteloupe is fantastic!!!

I cook ahead as well. My workplace is air-conditioned so that I'm freezing all day and want something hot! I have the 1-cup serving savers, so it's easy to get the portion sizes right. Also, my lunches aren't large because I have morning and afternoon snacks.

Today I am going to have a half-cup of boneless, skinless chicken breast in a half cup of "sauce" that I made with onions, tomatos, and hot curry powder.

Yesterday I wasn't so prepared and had a can of Amy's lentil soup.

The day before that I think I had a cup of rice/beans/veggie mix -- not a lot of protein in that one.

today I packed in my lunchbox:
peanut butter and honey sami on 12 grain bread
1/2 cup of cottage cheese
1 nectarine
1cup of cherries
2 tablespoons of hummus
1 cup of whole wheat baked pita chips
about 12 baby carrots
and a diet coke
