What is your most satisfying meal or food?

My diet is boring when I cook for myself. No imagination, no motivation, I don't know. I love everything others make or think of and I hate mine. I am starting a healthy eating notebook for myself. If you can share a simple sure=fire recipe..it will be like I am eating at your house.
I'll bring the fruit salad for dessert. What do you say?

I like to add boiled eggs to a salad

Also, tuna, eggs, onions, lettuce (& other veggies) stuffed in a Pita is really good

Also done chicken or beef strips with fresh peppers & ranch dressing wrapped in a tortilla.

My favorite easy and low cal chicken is:
Melt abt 1 tsp butter for each chicken breast (boneless, skinless)
dip chicken breast in butter
sprinkle with salt, garlic salt and paprika
then drizzle with lemon juice (about a tsp.)
bake until tender and cooked through. (Usually takes about 20 minutes. I think I cook it at 375.)

I also love Tyson's Honey BBQ wings. 3 - 4 is enough for me and doesn't break the calorie bank.

For a treat -- Avocado strips with salt is better than french fries!
and Pillsbury's pop-n-fresh Sugar Free Cinnamon Rolls are wonderful! (only 100 calories or 1-2 WW points.

Sound like you are in a rut. I love ckicken breast with brocolli, humus with ww crackers. Stews and soups with small amount of meat but lots of garlic, spices and fresh rosemary. Fritatta with spinach and feta cheese and basil and oregano and egg but only half the yokes.

Salmon steaks or fillets not sure what you call them. Marinate them in 1/2 cup Olive Oil. 2 tablespoons white wine. 3 tablespoons lime or lemon juice (don't ask me why I never have lime or lemon juice I try to remember and forget so I have used OJ and it still tastes great) 1 teaspoon honey. 1/2 teaspoon rosemary crushed. and 1/3 teasoon paprika. Mix all the ingredients and marinate the salmon in it for at least 30 min. Then either grill or broil. I have broiled them and I place the rack as close as possible to the heat and broil for 6min.

For sides I like my cheat version of cole slaw (1 16oz packages of cole slaw mix with 3/4 cup Light Done Right Creamy Italian dressing mix and serve) or I also love the new Rice a Roni whole grain blends.
