Is this a good dinner?

I wanted to have a healthy dinner last night but there was nothing in the house and no time to go shopping. So I had a can of black beans with half a white onion and some red pepper flakes.

Is this a healthy meal. I know it's not super healthy but is it healthy at all?

The black beans have a good amount of protein, but you need to make sure to rinse them well. You might want to stock the freezer with frozen veggies, because that meal definitely needed some vegetables, and it's easy to grab them from the freezer (just as good as fresh veggies!) and steam them. It could have been worse - you could have stopped for fast food!

I think that's an ok dinner...onions are a vegetable, although adding some frozen strips of red pepper might have been very tasty. And black beans have lots of fiber, which is good for you. They have incomplete protein, though. Adding a little bit of rice would have completed the protein, which would have been healthier.

I would add a bit of dairy in there like 1% milk, a NF yogurt, or string cheese.

It's pretty good. Doesn't really matter if it's just one night. If this was your regular dinner, I think you should probably have some green vegetables as well -- broccoli, or a salad.

I love black beans, myself.

an easy dinner for me in the past has been: rinsed canned black beans mixed with rinsed canned corn, add some fresh salsa or pico de gallo on top, chopped avocado, and maybe a little cheese (as one poster mentioned)...jazz it up howerver you'd like, but i've heard the bean/ corn combo is equivalent in some way to eating a lean cut of meat????
