Holiday Recipes

Does anyone have any good recipes to take to a hoiday dinner? Actually, I guess I mean any HEALTHY recipes beyond a veggie tray. My MIL is having Thanksgiving this year and I told her I'd bring a couple of healthy items. I'm so used t taking fat and sugar laden recipes I can't even think where to begin.

My mom always makes this mashed cauliflower dish that she calls "substitute potatoes." I think it's gross, but she likes it... I'm sure the recipe is online somewhere, I think it's Atkins.

Angel Food Cake is mostly full of air and is relatively low in calories, even when drizzled with some glaze or icing.

Try Sweet Potatos

One of the most traditional dishes you can take can be one of the healthiest. I read in our local paper last year about the "right" way to bake a sweet potato...low heat for a very long time. The longer you let it cook at just the right temp. the sweeter they become all on their own.

I put min in tin foil on the bar-b-que and let them on low for an hour then added the steaks etc. When we took them off and opened them up the aroma was to die for! They were almost runny but not quite and they needed no sugar, or sweetner of any kind. Personally I like them in the skins with a litte bit of Smart Ballance (Butter substitute)..but I think you could even mash them up at this point and serve them like a cassarole.

I usually make a sweet potato casserole for the holidays but it is so full of fat and sugar that it is past the point of healthy. I guess I'm looking for more of a specific recipe that is not a dessert.

I guess I was not clear..but you don't have to add any sugar or fat to sweet potatos if you make them right! Then it can be a side dish...
I've tried califlower mashed potatoes and they can work if you don't add too much garlic....
Or...you can make some other type of tastey veggie like squash, green beans cooked with almonds, broiled tomotoes, eggplant cous cous you name it!

Thanks for your suggestions. I appreciate it. But I'm looking for something that everyone will want to eat. There are a lot of picky eaters in this group. If it were just for me, then your suggestions are great. It's what I eat regularly. I love vegetables fresh and steamed. I'm not a low carb dieter. So making a recipe using cream, mayo or butter is not what I'm looking for.

*roasted* sesame green beans

this was delicious, super simple and very flavorful...i got the recipe out of the latest cook's illustrated....

pre-heat oven to 450 degrees
clean, dry, and trim 1lb of green beans
toss with salt, pepper, and a tiny bit of extra-virgin olive oil
lay on a foil-lined baking sheet in a single layer
roast at 450 for 10 minutes
while in oven, combine 1 tbsp minced garlic, 1 tsp minced fresh ginger, 2 tsp honey, 1/2 tsp toasted sesame oil and 1/4 tsp red pepper flakes in bowl
remove beans from oven, toss with garlic-ginger mixture
continue roasting until dark golden brown in spots, another 10-12 min
optional: toss with a few tsps sesame seeds after roasting is complete

you could do everything up until the final roasting in advance and just finish them off at the meal!

Pomegranate and Baby Spinach Salad

1 or 2 medium pomegranates
1 bag baby spinach

Get all the seeds out of the pomegranates, and then toss the seeds with the spinach. Dress lightly with olive oil and basalmic vinegar or a mild raspberry vinagerette, if desired.

This is a beautiful dish - the pomegranate seeds are like little red jewels or sparkly lights, and the red/green contrast with the spinach is very holiday-ish. It's also extremely easy and healthy. And if it's too boring for you this way, add other colorful toppings...chopped up bell peppers, mushrooms, carrots, etc.
