Likeavocados and bananas, kiwifruit contain substances called compoundsthat are associated with the latex-fruit allergy syndrome. There isstrong evidence of the cross-reaction between latex and these foods. Ifyou have a latex allergy, you may very likely be allergic to thesefoods as well. Processing the fruit with ethylene gas increases theseenzymes; organic produce not treated with gas will have fewerallergy-causing compounds. In addition, cooking the food deactivatesthe enzymes.

Even though the it seems odd, eat the skin an your kiwi fruit! There is a ton of fiber in there. Just scrub the kiwi well under running water to remove most of the fuzzies, dry and eat it like a peach.

I had no idea that you could EVER eat the skin. I've always known skin usually has all the vitamins but didn't realize this. So cool to read.
