There are 42 calories in a 1/2 cup serving of Artichoke hearts, which is how much most of us eat them.
 
114 mg of salt in a serving of hearts, which is a little high, but that is one of the reasons they are so tasty!

Are Artichokes and Artichoke Hearts Healthy? Whats The Deal With That?

This is an interesting question, because they are a very common and popular food in Europe, The Middle East, And The Mediterranean.

They don't appear on the World's Healthiest Foods list. Also, in Dr. Fuhrman's food ranking system, they are close to the bottom of the list in terms of the phytochemicals and micronutrients that he likes to look for and promote.

However, artichokes have been shown to improve liver function. A chemical in artichoke called "Cynarin" helps with digestion and strengthens liver function.

Our friend Jonny Bowden writes that artichokes have a "long history in treating many liver diseases. Their active ingredient is cynarin, which has demonstrated liver-protecting effects. Artichoke extract is in a lot of liver-protection supplement formulas."
