The fiber in broccoli does a better job of binding with bile acids in your digestive system after they've been steamed. Your stomach uses bile acids in the digestion process of the fiber.

Your body then needs to make more bile, which it does from cholesterol!!
The result is a lowering of your cholesterol levels. Raw broccoli still has cholesterol-lowering ability- just not as much.
